striving for the smallest footprint
I live locally with my partner Dave. I raise purebred Kunekune pigs, a couple of sheep, chooks, dog and a dove - all of us on a paddock. We are 'off grid' and are in the middle of building a container house.
We generally eat a Paleo diet and I do all my cooking at home on a NZ made Homewood Companion wood fired stove, which also heats the house and the water (click on the photo below to meet her maker). We are solar powered. Travelling 140km per day to teach Professional Cookery is not a small footprint. I leapt at the opportunity of only 12km travel and I thank Sharon for selling to me the Manakau Store. I am looking forward to getting to know the business and the customers. My sister once said that I 'always had a relationship with food' as she only eats because she is hungry.
Back then I was making yoghurt, peanut butter and honey ice cream, cooking the dinners, churning cream, feeding and getting way to attached to the Christmas piglet. Small wonder I became a Chef. I trained at Waikato Technical Institute and loved the City and Guilds of London training as it meant I could travel. UK, Europe, Africa and Australia - a tiny snippet of culinary delights. I fell in love with street food. I came home eventually but did not return to the King Country farm, but to Porirua, where I started teaching at Whitireia Polytechnic. That was 22 years ago. I have met so many amazing graduants and collegues. I have also worked part time for Ruth Pretty and Sarah Seranke. I joined the local Chefs Assn branch and I also qualified as a L6 Supervisor of Culinary Fares. I enjoy training Chefs for competitions as well as judging. I created gate28 ltd to focus on consulting as I am always giving advise, so I figured I should get paid for it. Now gate28 has bought the Manakau Store and now there is so so much more to learn, and I hope you come and give me your feedback.
